15 Minute Egg Roll in a Bowl

When you use a coupon from the local Chinese food delivery place do you use the 4% off your order one or the 2 free egg rolls one? I’m free egg rolls all the way. I’m also super sad when they are gone and always have wished my 20 year old metabolism had stuck around so that I could just eat 10 of them for dinner. I was SO pumped when I heard about the whole concept of egg roll in a bowl. You literally blink and this low carb recipe is ready to serve. That is HOW EASY AND FAST IT IS. I’ve made some tweaks to make this healthier, easier and more veggie packed for all of us that look at an egg roll and gain 12 pounds. If you aren’t trying to cut the calories as much go ahead and use pork sausage to take it next level. Or if you are trying to cut calories use a bit less sesame oil and leave off the wonton strips.

Ingredients

1 lb ground beef or turkey
1 bag of coleslaw mix
1/2 bag of shredded carrots
4 cloves of minced garlic
1 T minced ginger
1 T coconut aminos or soy sauce
1 T sesame oil
1/4 C chopped green onions
Fried wonton strips
Sesame Seeds


Directions

  • Heat large skillet over medium high heat and add beef or turkey. Cook until crumbled and cooked through. Do not drain off the grease.
  • Add the coleslaw mix, half a bag of shredded carrots, garlic, ginger and coconut aminos to the pan and cook 3-4 minutes until cabbage is slightly softened.
  • Remove from heat and top with green onions, sesame seeds and fried wonton strips.

  1. Adding to this week’s menu. Where do ou find the friend wontons? I like them on salad, but can’t find them at King Soopers!

    1. That’s so strange since I have always gotten them at king soopers! I couldn’t tell you what aisle though since I use instacart, but I can tell you they are the fresh gourmet brand. Have you looked over near the salad dressing by the rest of the pre bagged toppings?
